it's fun watching the beer ferment, the first few days the yeast gets really active, you can see big chunks of it "swimming around " like crazy as if they were fish . one thing i never realized before i started making beer is that the type of yeast you used can greatly influence the flavor . there are thousands of strains of yeast . the yeast in a german wheat beer called hefeweizen can make it taste like bubblegum
